Meet the Family Behind Pizza Antico

If you love pizza and haven’t heard of Pizzeria Antico, you’re missing out on one of Twin Falls’ best-kept secrets. Owned and operated by Doug Gaskill, his wife Charmaine, and their children Chance and Caitlyn, this family-run pizza truck is serving up some of the most authentic pies in the Twin Falls area.

 The Journey from Hobby to Business

Doug is an Idaho native and former rodeo photographer. His pizza journey began unexpectedly.

“I was injured in a rodeo accident,” he explained. “I was laid up for several months and couldn’t do anything but lay there, so I really started watching a lot of cooking shows. That’s what got me interested.”

After experimenting with recipes and techniques at home. Next thing he knew he was traveling to pizza expos and learning from world-renowned pizza makers.

“I decided to get serious about it,” he said. “I started attending the International Pizza Expo in Las Vegas, taking classes from multiple world championship pizza makers—not just from the U.S., but from all over the world.”

Twin Falls Pizza More People Should be Talking About

Doug’s approach to pizza isn’t just about making a great pie—it’s about preserving old-world traditions. That starts with the dough, which is fermented for four days to develop flavor and a light, airy texture.

“The dough is everything,” Doug said. “We don’t rush it. It takes four days to make because that’s how you get the best flavor and texture.”

A Variety of Pizza Styles

While Doug has experimented with several styles, the truck primarily serves three main types:

  • New York-Style

Classic hand-tossed thin crust, foldable with just the right chew.

  • Detroit-Style

A deep, rectangular pan pizza with a crispy, caramelized cheese edge.

  • Sicilian-Style

A thick, airy, focaccia-like pizza baked in a steel pan.

Each pizza is cooked in brick-lined ovens imported from New York, ensuring the crust stays crisp. If you’ve ever had a takeout pizza go soggy on the drive home, you’ll appreciate that Doug has perfected a method that makes for a crispy crust.

High-Quality Ingredients and Scratch-Made Everything

The Gaskill's don't cut corners on ingredients. The flour is sourced directly from a Utah mill, using wheat grown here in southern Idaho. The tomatoes come from a family-run company in California known for some of the best pizza sauce tomatoes in the business. And the cheese is an Italian-style cheese from Wisconsin, chosen for its flavor and melt.

The Secret to Great Ingredients

The sauce is simple, allowing the tomatoes to shine with just a touch of sea salt, black pepper, oregano, and fresh basil. Doug uses sausage and bacon sourced from Falls Brand, and many of his toppings like arugula and cherry tomatoes are often grown in the family’s greenhouse south of Twin Falls.

 Is a Brick-and-Mortar Location Coming?

Heading into their 10th year of serving pizza from a truck, Doug and his family are exploring opening a brick-and-mortar pizzeria. They are currently interested in a location on Blue Lakes. 

If everything falls into place, they envision a slice-shop concept for a quick, hot bite on the go.

“We’re hoping to have something ready by summer,” Doug said. “It’s a big investment, but we think Twin Falls is ready for a real slice shop.”

Plans like this are subject to change and Doug reiterated that they were in the very early stages of looking into whether a storefront pizzeria is viable.
