Domino’s Pizza doesn’t want to lose customers with mild gluten allergies, so it is adding a gluten-free crust to its menu.

To create the crust, the delivery chain worked with the National Foundation for Celiac Awareness to develop a a product that those with a mild intolerance to gluten could enjoy and digest without incident. Customer requests dictated the addition of this new item to the menu.

It’s said that up to eight percent of Americans have cut gluten — a protein found in wheat, rye and barley — from their diets and that 18 million people suffer are sensitive to it. The allergy causes gastrointestinal pains.

There’s a bit of a caveat, though. Domino’s gluten-free pizza will only be available in the small, 10-inch size and will come with a bigger price tag that that of the regular crust, since producing a gluten-free baked good is more expensive. It’s simple economics, but worth it if you are a Domino’s fan.

Also, the gluten-free crust is not for those who suffer from a severe intolerance. These crusts will be prepared band and baked in the same area as the standard pies, so the possibility of cross-contamination always exists.
