December 30 is National Bacon Day in the United States. Those of us who eat bacon, have at least one favorite dish that just wouldn't be the same without this salty, savory ingredient.

According to data found at Statista, more than 250 million Americans consumed bacon in 2017. That's almost 80% of the entire US population, according to recent population projections.

Part of the reason I love my weekends, is because Saturdays and Sundays are really the only times my wife and I have time to prepare it. Breakfast sandwiches are a staple of my weekend. While we're on the subject, I thought I'd share the recipe for a sandwich that is a MUST TRY if you're a fan of pork.

Several years ago, my wife and I saw the film "Spanglish," starring Adam Sandler. While the movie wasn't incredible, the scene where Sandler (he plays a chef) makes this sandwich, would make any sane American's mouth water.

Here's how we make it: (There are a number of variations online if you google)

3 strips of bacon

2 slices of Monterey Jack Cheese

2 slices of toasted sourdough bread (buttered with mayo)

2 slices of tomato

2 leaves of butter lettuce

1 fried egg (runnier yolk the better)

We construct the sandwich (adding the egg last), then pan fry it briefly to give the bread a little color. It's unreal, especially with a pint of your favorite lager.

Seeing as Saturday is National Bacon Day, I thought I'd contact someone who knows a little bit about bacon here in Twin Falls. Falls Brand Independent Meat Company's Vice President of Sales & Marketing, John Howard, shared his thoughts on one of his favorite bacon dishes.

"Quail meat, wrapped in jalapeno and bacon," said Howard. "But I'll eat bacon on anything."
