I have to preface this by saying that I am terrible at grilling. These tips come from those who know - so if you can follow these suggestions you may one day become the pro you (and your family) wish you were.

  1. Take it easy on the Lighter Fluid - If you are cooking with charcoal you have to be patient. You may have to fight the urge to soak the charcoal in fluid to get it going but instead you can use newspaper to keep the flame going. If you do for some reason use too much lighter fluid, let the coals burn for 30 minutes and that should help your food not soak up the fluid flavor.
  2. Let the grill heat before loading it with meat - One thing you'll learn about grilling is that it requires patience. Turn on the grill let it heat and then put the meat on. This will help it cook evenly and not stick to the grill.
  3. Don't use full heat all the time - once the meat is looking good it is OK to move it to the edges of the grill or on an upper level if available. Just don't move it around too much (more on that later).
  4. Don't cook too much at once - Two reasons for this. If you have too much going on you may accidentally burn your meat since you are focused on others. Also you don't want to be cooking your steak with a special BBQ sauce next to your chicken with a totally different sauce and risk getting the flavors mixed.
  5. Don't move the meat too much - Again with the patience! This is probably my biggest flaw when grilling. I can't just let the steak sit there and cook. I usually flip it a few times and press on it to see what color of juices come out. Like I said - don't be like me. Some grill masters suggest you only flip the meat once while cooking and it will keep the juices better (this is where using the cooler areas of the grill comes in handy).
